The chocolate and sugar will readily mix together once the two are nearly the same consistency.The sugar and cocoa MUST be combined while dry or else they will seperate when moisure is added.

A : Not reliably, no. There is a distinct differenced in taste between unsweetened baking chocolate (100% cacao solids) and chocolate chips (really good ones are 65% cacao solids at best - the rest is various additives.) Also, the sugar content of the chocolate chips will change the basic chemistry of the recipe.

You could substitute chocolate chips in a brownie recipe that called for "semi-sweet chocolate."

Q : I'm trying to make vegan treats for my friend but the only milkless chocolate they had at the store was unsweetened chocolate. I've been adding sugar but it doesn't seem to be working. How can I sweeten it without using milk?
A : If you have confectioners sugar (powdered) add it a teaspoon at a time to the unsweetened chocolate until it tastes sweet enough. If you don't have powdered sugar you can use regular granulated sugar but you will have to put some in a cup or something and then using a spoon grind the sugar against the side of the cup until the sugar breaks up and becomes finer. The chocolate and sugar will readily mix together once the two are nearly the same consistency.The sugar and cocoa MUST be combined while dry or else they will seperate when moisure is added.

A : you cannot easily replicate milk chocolate at home for a number of reasons. milk chocolate isn't made with milk, it's made with milk solids...your best bet is just to buy a chocolate bar. if you really want to just play in the kitchen...get a double boiler going...once the water's boiling, drop the heat to low, add your chocolate, add your sugar, try adding milk solids...my guess is you'll fail (no offence, just how it's going to go)...and then pour into a mold and cool (you'll probably need to use your fridge).

seriously...if you want to make your own chocolate bar, buy the chocolate you want to use, and melt it down, and put it in the mold. it sounds cool to make your own chocolate, but there are so many variables that go into it from how pure chocolate is in what you have to how much of other ingrediants are in the chocolate you have. the latter is not something you can just look at the package and just find out. if you're just looking for something fun to do in the kitchen, just do whatever you want with it...experiment, and maybe you'll create something that works, but if you want to do something right keep it simple...buy the chocolate you want to use and make it with that...best of luck

A cool thing to do is to divide the recipe into several bowls, flavored with different flavorings, then rolled in different things to show which they are. If you bring a plate of these to work and put them on the table in the break room, they won't last ten minutes! 8^)
