Q : I have an unsweetened bar of Sharfenberger baking chocolate. Almost every recipe I have uses cocoa POWDER . Do I just break off an equal amount of baking bar and add the melted chocolate in place of the powder?
Clare, if I use the bar then I need to reduce the fat I add by the amont I'd have added if I used cocoa powder? Thanks!
I dont think I can use the bar in place of chips..the bar is UNSWEETENED...like 95% cacao it says on the front..so I gotta use sugar to sweeten it!
A : no. if you need powder, you need powder. with baking, recipes are formulas and you need to consider liquid, fat, leavening and caramelization of all the ingredients. Save the block for when you need chips or melted chocolate and buy some powder for these recipes.

Can unsweetened chocolate be substituted for semi-sweet?

A : you cannot easily replicate milk chocolate at home for a number of reasons. milk chocolate isn't made with milk, it's made with milk solids...your best bet is just to buy a chocolate bar. if you really want to just play in the kitchen...get a double boiler going...once the water's boiling, drop the heat to low, add your chocolate, add your sugar, try adding milk solids...my guess is you'll fail (no offence, just how it's going to go)...and then pour into a mold and cool (you'll probably need to use your fridge).

seriously...if you want to make your own chocolate bar, buy the chocolate you want to use, and melt it down, and put it in the mold. it sounds cool to make your own chocolate, but there are so many variables that go into it from how pure chocolate is in what you have to how much of other ingrediants are in the chocolate you have. the latter is not something you can just look at the package and just find out. if you're just looking for something fun to do in the kitchen, just do whatever you want with it...experiment, and maybe you'll create something that works, but if you want to do something right keep it simple...buy the chocolate you want to use and make it with that...best of luck
