Q : i wanted to do some baking, but i dont have any unsweetened chocolate squares. i do have baking cocoa, though. could i use the baking cocoa instead of unsweetened chocolate?

How can I make unsweetened chocolate milk?


Q : One of my favorite hot beverages is warm milk with unsweetened cocoa powder. It's warm and creamy like hot chocolate, but isn't all disgusting sweet. It got me wondering if there would be a way to do the same thing with cold milk. Any suggestions how to make the unsweetened cocoa powder dissolve in cold milk?
A : I don't think it will work. You could try making a whole quart of warm milk with cocoa powder and letting it cool then keep in fridge.

A : You could use unsweetened chocolate for a chocolate glaze, but remember, unsweetened chocolate has no sugar in it, so if you were to use it, be sure to add some sugar to your own taste.

Q : I have a lot unsweetened chocolate squares and would like to know how to make truffles.
A : Ganache is just chocolate and cream. (For people who don't think chocolate itself has enough fat in it. 8^) ). Generally you chop the chocolate into small pieces, then pour hot cream over it. The chocolate melts, you mix it up, and there you have ganache!

If it's unsweetened you add sugar! (Duh!) Not a lot. It's supposed to be 'semi-sweet'. I use Spenda because I'm diabetic, and it renders them totally harmless! Can you imagine totally harmless chocolate? 8^) (Except for all that fat, of course.)

Truffles are very easy to make. There are many recipes but mostly they are chocolate and cream, and maybe some liqueur for flavor. MANY flavors go well with chocolate! You make the mixture, chill it in the fridge, then roll it in little balls (carefully, so as not to warm it up with your hands). You roll the little balls in cocoa or crushed nuts or cocoanut or something to keep them from sticking together or to the plate. A cool thing to do is to divide the recipe into several bowls, flavored with different flavorings, then rolled in different things to show which they are. If you bring a plate of these to work and put them on the table in the break room, they won't last ten minutes! 8^)
