A : When Hershey decided to change their Dutch Process cocoa powder around 2004, I was compelled to find a replacement that was as good. I tried every cocoa powder out there and nothing was as good. About a year later, Cooks Illustrated did a taste test on cocoa powder and Callebaut came out on top (January 2005). I found it online and decided to order it even though it came in a large quantity and it was a bit pricey. I have never used any other cocoa powder since. It is fantastic and worth it. I get huge compliments on all of my chocolate recipes and I know it is the Callebaut cocoa. Your brownies will never taste as good with any other cocoa powder. Your homemade hot chocolate will be the envy of all the kids in the neighborhood. I find ways to use the quantity within a year and no one complains!

Q : i would like to hear feedback from anyone regarding the dark chocolate supercoats/compounds of barry callebaut brand. the supplier i talked to wont allow free taste test.. i dont want to waste 40$. please help me...

are their compounds with fairly good results when used in baking?
A : Callebaut chocolate is one of the BEST chocolates you can get. I have used it for the past 10 years and I know all the exclusive restaurants use it for their pastries. It is very good choc. and you will not be disappointed in it. Use it for NICE projects as this is not one you want to use for inexpensive do at home projects. If you buy it in the pellet form it is easier to work with or the block works well too, just that you have to cut your own.. Also if you have an ALDI'S store near you they sell it under the guise of Barry Callebaut, but it is all good. The European chocolates are much better for NICE projects. I prefer the Bittersweet and the White choc. for my uses. I hope this helps, any questions, please email me.

Q : So, I want to make Chex muddy buddies (also often called puppy chow), my friend's favorite treat, using his favorite chocolate, Callebaut. I normally just use milk chocolate chips from the store, but Callebaut offers six different types of milk chocolate so I'm just not sure which one I should choose since I have never tasted any of them.

I wasn't sure if anyone who knew more about chocolate or baking than I do could suggest which chocolate description sounds best to use in place of the store bought milk chocolate chips I normally use?

A : What a nice friend you are! The Callebaut milk chocolates vary in amount of cocoa butter also which gives a different consistency. I think you want to go with one that's not too mild in flavor and with not too high of a cocoa butter content so your puppy chow has a good chocolatey flavor and doesn't turn out sticky and needing a lot of extra powdered sugar. I'd go with the Select, Refined or Excellent and personally I'd probably choose the Excellent. Really, whichever you choose, it will tast great. The Callebaut is all wonderful.
