Is mexican chocolate any less harmful to dogs then regular chocolate?
Q : So my dog ate a tablet of mexican chocolate drink mix. It's called "Abuelita" by nestle. In the ingredients it says it contains "chocolate processed with alkali." What is alkali?A : Mexican chocolate is neither more nor less toxic to dogs. Chocolate toxicity depends on the amount of cacao consumed. The darker the chocolate, the higher the cacao concentration. Baking chocolate is the worst, then dark chocolates, then milk chocolate, etc.
The tablet your dog ate doesn't have enough cacao to harm him.

Q : I've lost my copy. This recipe used piloncillo while most recipes I've found online use brown sugar. This would have appeared in an issue from probably 2000-2001. I have tried searching the foodandwine.com database without success.
A : MEXICAN CHOCOLATE BROWNIES
1 c. cocoa
3/4 c. butter, melted
1 1/4 c. all purpose flour
1/2 tsp. salt
3 c. granulated sugar
7 eggs, lightly beaten
1 tbsp. vanilla extract
2 1/2 tsp. ground cinnamon
1 tsp. freshly ground black pepper
Preheat oven to 350 degrees. In a small bowl, combine cocoa with butter, stirring until smooth. In a large mixing bowl, combine flour, salt, and sugar. Stir in cocoa mixture. Blend in eggs, vanilla, cinnamon, and pepper. Pour into lightly greased 13 x 9 x 2 inch baking pan and bake 35-40 minutes or until center is set. Makes about 24 brownies.
What to eat with Mexican hot chocolate?
Q : I have heard that a bolilio (a small white roll) normally goes with Mexican hot chocolate. Do you put anything on the bolilio - jam, etc. - or must it be plain? People who know, please.
A : You can spread some butter and sugar and warm it like toast, but you don't have to put anything on it; usually we don't.

A : Here are the instructions I use:
3.3 oz tablet of Mexican chocolate 2-1/2 cups milk 1 tsp sugar 1/2 tsp cinnamon
To make Mexican hot chocolate, break tablet of Mexican chocolate into pieces and bring it to a simmer with milk. Stir the mixture until the chocolate is melted and well-combined.
*Mexican chocolate is traditionally beaten to a froth with a wooden implement called "molinillo". You can imitate the effect by putting a small amount of your chocolate at a time in a blender and briefly pulsing it. *
