Q : i promised to make some brownies for a couple of girls that are down in the dumps, soon to realize that i don't have any brownie mix. so after looking up recipes i then realize that i don't have any bittersweet chocolate either, so now i'm looking to see WHAT chocolate i do have. i have some dark, some milk, and some baking cocoa which has a conversion to make into baking chocolate squares(equivilent). if you could give me either a recipe to help or help me with my delima it would be greatly appreciated.
A : Unsweetened chocolate is pure chocolate liquor, also known as bitter or baking chocolate. It is unadulterated chocolate: the pure, ground, roasted chocolate beans impart a strong, deep chocolate flavour. With the addition of sugar, however, it is used as the base for cakes, brownies, confections, and cookies.

Bittersweet chocolate is chocolate liquor (or unsweetened chocolate) to which some sugar (typically a third), more cocoa butter, vanilla and sometimes lecithin has been added. It has less sugar and more liquor than semisweet chocolate, but the two are interchangeable in baking. Bittersweet and semisweet chocolates are sometimes referred to as 'couverture' (chocolate that contains at least 32 percent cocoa butter); many brands now print on the package the percentage of cocoa (as chocolate liquor and added cocoa butter) contained. The rule is that the higher the percentage of cocoa, the less sweet the chocolate will be.

what temperature is good for baking chocolate chip cookies?


Q : i froze some of the dough about 3 weeks ago and i wanna use it to make more now but i threw out the recipe by accident which has the temperature on it..so is there just one temperature i can use or does it vary?
A : 350 is good for regular choco chip

oatmeal is a little trickier. it's 375 for temp, and you actually have to take them out after just 13 minutes while they still look slightly wet, so they will cool and dry chewy and nice.

What is the measurement for substituting cocoa powder for baking chocolate in baking a chocolate cake?


Q : I have extra baking chocolate which I want to use before its expiration date. I was thinking of baking a chocolate cake/cupcake but the recipes I found use cocoa powder. May I know the equivalent proportion if i use baking chocolate instead of cocoa powder?
A : 3 tablespoons + 1 tablespoon cooking oil is equal to one square of baking chocolate.

Do i absolutely need brown sugar while baking chocolate chip cookies? Is there an Alternative?


Q : I am making homemade chocolate chip cookies. Unfortunately i already started to make it and i dont have any time to run to the store. Do i really need to use brown sugar or will the cookies be fine without it ? Is their an alternative ?
A : It should be okay if you just use regular sugar, but even better if you make brown sugar by adding 1 tablespoon of molasses per cup of brown sugar and mix it thoroughly.
